Veggie Dip

I don’t always have the time – or the energy after working all day – to make the 2-3 veggie side dished I want to have to round out dinner. A lot o fthe time, all I have the energy to do is throw some frozen green beans into a hot pan, pop the lid on to thaw them and then cook them with butter and garlic and a sprinkle of lemon juice and salt. Yum.

But that’s another post.

When I’ve got enough energy to chop some veggies – any veggies (summer squash, peppers, tomatoes, carrots, celery, broccoli, etc) I make a dip. Here’s the recipe.

1/4 cup mayo
1/2 cup greek or strained yogurt
1 tsp apple cider vinegar
1 T dried herbs (make a mix: dill and garlic, chives and parsley, thyme and parsley, etc)
sprinkle of salt
sprinkle of spices (I like paprika, it adds a pretty color

Mix, let sit for 5 mintues or so, enjoy!
