Thanksgiving: the famous lentil salad

Evangeline brought her first dish to a gathering. She chose to bring a red lentil salad. I cooked the lentils and she did most of the chopping and mixing. We cooked a large quantity of red lentils until tender – but not soft.

She then peeled and…

…chopped a cucumber, a red bell pepper and some green onion from the garden.

Finally, everything was mixed with a vinaigrette of cider vinegar, oil, salt and pepper (she wanted simple!). Everything was sprinkled with some feta cheese.

Yum.
