Coming in at over a foot long, this garden zucchini was forgotten – but not forsaken! She (as all zucchini’s that flower and produce fruit are girls!) was made into a plethora of yumy goodness – including the zucchini pancakes that the little one and I gorged ourselves on 3 days in a row.

Can you say yum?

The Recipe:
3 cups shredded zucchini
salt and pepper to taste (so I used lots of both!)
2 eggs

Mix. Cook in grease. I cooked mine in bacon grease one day and butter the another. LEAVE THEM BE! Cook each side for 2-4 minutes until brown and easy to flip. Eat with your choice of sauce: the first day we used pesto mixed with yogurt, the next was ketchup. Some other ideas: bar-b-que sauce, thai sweet and spicy sauce, roasted red peppers or sundried tomatoes mixed with basil and yogurt.

Yum.
