Almond butter cupcakes

Almond Butter Cupcakes (or so E likes to think – they really are more “muffin” than cake!) gluten free, grain free, dairy free

1 cup of almond butter
2 eggs
2T liquid sweetener (I have used maple and honey for these and they both come out wonderful!)
2T applesauce
1T vanilla
pinch (1/8 tsp or less) salt
1/2 tsp baking soda
1 tsp lemon juice

Mix thoroughly with an electric mixer. I mixed for about a minute.

1/2 cup chocolate chips

Mix. Bake at 350 for 20 minutes checking at 17 minutes.
