Arroz verde. Green rice. This dish is rich in flavor, filled with cilantro and spinach – it tastes fresh and green – but definately NOT like spinach rice! I never got around to taking a picture of this dish, but try it for yourself. It was one of the best ways I’ve had to eat rice.
Everyone has a favorite of this classic recipe – here’s the one I’m partial to.
1 cup spinach
1 cup cilantro
3 garlic cloves
1 can green chilies
Puree ingredients in a blender. Pour over 3 cups of cooked rice, warm, season with salt and pepper to taste. Serve. You can add chicken stock or milk if you would like to thin it out.
