Cutting an onion – a la Chris

C taught me how to cut an onion. I thought it was ingenious. It is definately the quickest way I know how to cut an onion. Onions are one of the most used foods. I use onions when cooking Mexican, Indian, Greek, Italian, you name it. If you know how to cut an onion you can start cooking yummy food and saving money!

You need an onion, a knife, and a cutting board. Break away the paper from the onion. Throw away.

Chop off the dead end (and throw away) –

leaving the hairy end intact.

Cut down the middle of the onion – through the hairy end.

Start slicing int the onion, knife down, almost to the tip of the hairy end about 1/4 – 1/2 an inch from the end. Start on one side (lets say the right) and go to the other (the left).

Space the cuts 1/8 – 1/4 inch apart.

Here’s one half. Now do the other half the same way.

Oops. That’s OK. Just hold them together in the next part.

Now, 1/8 – 1/4 inch in from where the “dead side” was, cut perpendicular to your other cuts.

Keep going, all the way to the end. When it gets difficult to hold, just move the onion around and keep cutting.

Lovely, finished dices. Lovely cut onion, perfect to top my crockpot chili!

This is the hairy end when you are all done cutting. Throw them away!
